The Redoma Reserva comes from vineyards which are more than 80 years old, planted in mica-schist soils at an altitude of 600 metres above sea level
The grapes for the Redoma Reserva were transported under temperature-controlled conditions to the cellars where they were meticulously sorted before undergoing a slow and gentle pressing. The must was left to settle without skin contact for 24 hours, followed by a slow alcoholic fermentation in wooden barrique barrels. In these same barrels, the Redoma Reserva matured for 9 months, with complete malolactic fermentation - Bâtonnage is the process in which the sediment (lees) of mostly white wines, fermented on wooden barrels, is stirred. This creates a more stable wine, with less tannin and dye extraction of the barrel.
