On the 6.5-hectare Quinta, 2.5 hectares are planted with old vines over 80 years old, 1.5 hectares with 10-year-old vines, and another 2.5 hectares of vineyard with 12-year-old vines. The grapes are harvested by hand and placed in stone basins – the lagares – where the wine is pressed with the feet, just like in the old days. There, the wine undergoes malolactic fermentation before aging in barrels for 12 months.
