Serve lightly chilled as an aperitif with olives and almonds, mayonnaise-based appetizers, game, fish mousse, also very good with creamy starters, fish dishes and Indian dishes. Smoked salmon, sushi, caviar, tuna, light soups, salads, ham and dried fruits such as almonds and walnuts.

Throughout the 19th century and the first quarter of the 20th century, Rainwater was considered the most prestigious wine style in the USA. The grape variety most used in the past to make Rainwater was Verdelho, of which we used 85% in 2014. We aged 2,500 liters in a wooden tank with a capacity of 2,800 liters with the aim of causing very slow oxidation to the wine. To this batch we added 15% of a Sercial, from 2017, aged in a 620 liter cask.

Always store Madeira wine upright.
The acids of Madeira are so strong that they will attack the cork if the bottle is stored lying down
Serving: 10-12°C
Madeira is a wine that matured for several years in an oxidative environment, and then enters a reductive environment during bottling. It is therefore useful to open the bottles a few hours in advance. The bottles can then be stored almost indefinitely, as the air no longer has any effect on Madeira wines. In fact, the wine tastes better after months - if there is any left - than when the bottle was just opened.
