Sercial is traditionally the white variety used for the driest Madeira style. A sercial is always dry! This means that only at the end of the fermentation, when almost all sugars have been fermented, alcohol is added. The late grape variety is also called 'Esgana Cão' (dog strangler) because of its extremely high acidity in his youth. Because of that almost undrinkable acidity, sercial usually ripens quite long. Sercial comes from the highest vineyards in the south, about 600-800m or in the cooler North.

Madeira is a wine that has been aged for several years in an oxidative environment, after which it is bottled in a reductive environment. It is therefore useful to open the bottles a few hours in advance. The bottles can then be stored almost indefinitely, since the air no longer has any influence on Madeira wines. In fact, after months - if any - remainder, the wine tastes better than when you open the bottle.

Deep in color, with a slight iodine note, a hint of rancidity, and an almost salty character. Very appealing. On the palate, it's a dry wine, very austere but with immense vivacity and a freshness that makes tasting a pleasure. A challenging wine in terms of food pairing. A beautiful combination.
